Coincidentally, I did this today... Well, I took the pictures, I can't put together the file yet, but that's another story...

First, you need the software to stitch your photos together, but I'll assume you knew that. :-) There are websites about this topic that have listings of different software (a couple of packages which are free).

Second, it works better if your camera can lock its exposure settings, so that the colors don't change from picture to picture.

So you take overlapping pictures all around as you circle. The software puts it together, and you save it in whatever format the software supports. Sometimes you need to use a special viewer to see it in the 360 view.

I have had great results with some panoramic views, but for a full 360, I have not had one turn out right. :-( I have been looking into trying a different software program; there's a free version of one that is pretty good called "PixAround Lite".
